Corned Beef (Silverside)

Serves: 6

Ingredients

1.5kg – 2kg piece of corned beef

Method

  1. Rinse beef in cold water to remove surface brine.
  2. Place in slow cooker and cover with cold water.
  3. Set slow cooker to either low for a cooking time of 8 hours or high for a cooking time of 4 hours.
  4. Add a bay leaf, half a cup of brown sugar, one onion and cloves.

STOVE TOP METHOD

  1. Rinse beef in cold water to remove surface brine.
  2. Place into a heavy-based pot and cover with cold water.
  3. Bring pot to boil, then reduce heat to a low simmer.
  4. Add aromatics.
  5. Maintain simmer and allow 25 – 30 minutes per 500g of corned beef for cooking time.

Serve with white sauce and vegetables or slice thin and serve on a crusty breadroll with cheese, tomato and pickles.
