Sticky Pork Fillet
Serves: 4. Prep Time: 10 mins. Cooking Time: 20 mins + marinating time.
- 2 pork fillets
- 2.5cm piece fresh ginger, grated
- 2 garlic cloves, finely chopped
- 3 tbsp hoisin sauce
- 2 tbsp honey
- 2 tbsp soy sauce
- 2tsp oil for frying
- Preheat oven to 200°C.
Place the pork in a shallow dish and add the ginger, garlic, hoisin sauce, honey and soy and turn to coat the pork. Chill for about 15 minutes to marinate.
- Heat the oil in a large ovenproof frying pan, add the pork and fry all over for 2-3 minutes. Baste pork with excess marinade and roast for 15 minutes. (I kept basting the fillet with the excess marinade every five minutes just to get the extra flavour onto the pork). Check the pork is cooked and the sauce is sticky.
- Slice to serve and drizzle with pan juices.
