Originally called a California cut, the tri-tip has become increasingly popular because of its superior flavor. The tri-tip steak full of flavor, has excellent marbling and is very tender as long as you don’t overcook it. Delicious cooked on the barbie, it also is fabulous in stews when shown some love in a slow braise!
